Well, this coffee has a unique and natural processing method for fermentation. The Cat poop coffee was introduced by the Dutch in the 18th century in Indonesia. The seeds for the coffee beans are found on the coffee plants that are like cherry-sized fruits. This coffee bean is digested by a small Indonesian cat called Asian Palm Civet. The civet tends to eat the finest and ripest cherries and this process allows the enzymes to eliminate the acidity and impair new flavors to the coffee. These beans are not digested in the stomach and later are collected in the poop by the farmers. Despite the fact that the beans obtained from the cat’s feces have higher levels of contamination, the refined coffee is safe to drink, with no E. coli or other contamination. According to some of the coffee experts, this natural method of fermentation results in a smoother taste and less acidic concentration than any other coffee fermentation processes.
